Baby salad (also known as baby lettuce or lettuce hearts) can be stewed perfectly. With a perfect dressing and a few walnuts it doesn’t look like only delicious, it tastes also great and it’s very noble. The dish is great for an appetizer or a snack. Of course also for a main meal, just get a bigger portion or take some bread, you’ll love it!
Typically we serve braised baby lettuce with walnuts and fine lemon dressing on hot summer days, so it’s okay if the the braised lettuce cooled down already before eating. In winter you can heat the dressing just still before serving.

Ingredients

4 | baby lettuces |
100 g | walnuts |
4 | garlic cloves |
4 Tbsp | olive oil |
Dressing | |
150 g | soy yogurt (natural) |
½ | lemon |
1 Tbsp | agave syrup |
1 tsp | salt |
1 tsp | pepper |
Directions
- 1Mix the soy yogurt with agave syrup, salt, pepper and the juice of the lemon
- 2Halve walnuts into quarters, garlic and roast both in a pan over medium heat, then remove
- 3Wash baby lettuce and halve lengthwise - including the stem! Drain and stew the cut surface in a pan with olive oil for ~5 minutes, until they are golden brown
