Sometimes it has to be fast, as our everyday life is often hectic and requires us to cleverly save time at dinnertime without having to give up our great, healthy and tasty food – we still want a nourishing meal! This recipe is great, as it is also suitable as a cold dish so you can take a serving for lunch at work The fried broccoli with sun-dried tomatoes and cashew nuts recipe is 100% vegan and unmistakably delicious!

We like sun dried tomatoes, because of the intense flavor and we also love to conjure up dark sauces with it – I will publish my recipes for this another time Sun dried tomatoes go well with fried cashew nuts and broccoli, which although also generally can be eaten raw, but most people find it much better when it’s fried or cooked.

You might have already noticed that I currently often renounce the use of chili. However, for this recipe they also fit very well when fresh and sliced into ring. You can also simply use dried and chopped chillies! Unfortunately chili’s are a too strong a fat burner for me – I’m already quite slim, maybe just because of that, considering that I eat everything I find it difficult enough because chili’s are absolutely delicious, even really hot chili peppers have, for me, a amazing flavor and I also grow my own chili plants indoors with special LED lamps. I’m going to shut down the local chili production after the next harvest and will change to less hot chili’s

500 g broccoli
100 g cashew nuts
75 g tomatoes (sun-dried)
 sesame oil
½ tsp oregano
½ tsp dill
½ tsp rosemary
½ tsp pepper
½ tsp salt
75 ml olive oil
1 Tbsp lemon juice


  • 1
    Mix all ingredients together in a jar of sauce

    Cut broccoli into florets and sun dried tomatoes into quarters
  • 3
    Fry cashew nuts in a frying pan and remove
  • 4
    Heat sesame oil in a pan and add plenty of broccoli and sear by stirring for 3 minutes
  • 5
    Mix in the sun dried tomatoes, cashew nuts and sauce and sauté all for 2 minutes while stirring well
