Today at noon I got really hungry, but that’s nothing new for me Despite an extensive breakfast with fresh guacamole, tomatoes, cucumbers, home-grown herbs and bread, feeling of satiety does not last forever on me. That’s why I harvested half of my own coriander and took canned tomatoes and tofu out of a closet. Also onion, garlic, pepper and oregano should not be missing. Luckily I already bought some tortilla chips as a side dish on my last shopping trip at the supermarket… Tofu in tomato-coriander-sauce is very tasty because of the coriander, you could vary with the spices according to your own likings.
The Sugo is a simple recipe and is suitable as an appetizer or main dish, as well as a delicious snack. Of course it also tastes great with some rice or potatoes, instead of the tortilla chips.
If you like it a bit more liquid, you can still add some water.
Ingredients

½ tsp | black peppercorns |

Directions
- 1Peel onion and garlic, chop both and sauté in a pan with coconut oil
- 2Cut tofu into stripes, remove the stalk of the canned tomatoes and cut into small pieces
- 3Put tomatoes together with the peppercorns, oregano and salt in the pan, simmer for 5 minutes, stir occasionally
- 4Coarsely chop coriander and add together with the tofu in the sauce, simmer for a further ~ 7 minutes, stir occasionally
